    From farm to factory: the four groups

    NOVA sorts food by how much, and why, it has been processed. It was developed at the University of São Paulo and is the scale behind most research on ultra-processed food.

    1. 1 Unprocessed Whole foods as nature made them, or only dried, frozen or pasteurised: fruit, eggs, plain milk, oats.
    2. 2 Kitchen staple Ingredients pressed or refined from foods to cook with: oil, butter, sugar, salt.
    3. 3 Processed Whole foods preserved with a few kitchen staples: canned beans, cheese, fresh bread, salted nuts.
    4. 4 Ultra-processed Industrial recipes with ingredients no home kitchen uses: soft drinks, most cereals, packaged snacks.

    Of the 40,000 products here, 61% are ultra-processed. How the groups work

    • Group 1, minimally processed: 5,017 (13%)
    • Group 2, culinary ingredient: 1,061 (3%)
    • Group 3, processed: 9,417 (24%)
    • Group 4, ultra-processed: 24,505 (61%)
